🔥 ROASTED TO ORDER. Quills doesn't roast this until you buy it. Four guys, 45-pound batches, four roast days a week in Louisville, Kentucky. It rests to degas, then ships. Their words, not ours: "All coffee is roasted to order."
Why I carry it: Blended specifically for cold brew, which is why it's the one we link from the cold brew coffee guide. Coarse grind, 12 to 18 hours, done.

It’s literary. It’s Southern. It’s dark. But we’re not talking about Flannery O’Connor, William Faulkner or Cormac McCarthy. Southern Gothic is warm, comfort coffee at its best. We chose to start offering this as our in-house cold brew because it’s a great, darker-roasted, low-acid blend. Think heavier body, rich full chocolates and caramels. The kind of coffee anybody can enjoy.
