Roasted to Order

One rule gets a roaster onto this shelf: they have to say, in writing, on their own website, that they don't roast your coffee until you order it. Not "fresh." Not "small batch." Roasted to order.

Right now that's Quills Coffee of Louisville, Kentucky: four guys, 45-pound batches, four roast days a week, shipped after a short rest so the coffee lands at its peak. When another roaster puts it in writing, they go on the shelf. If one stops, they come off.
